What's change
After germination or sprouting of 100 gram of green gram (whole) which nutrients are increased and which nutrients are decreased? Why i am asking this question "USDA" gives only 3 gram of protein for 100 gram of sprouted green gram but some one say that the protein content is increased after germination

Hi, Germination helps to improve bioavailability of different nutrients. It helps in more variation and improve digestibility of essential amino acids, improve vitamin c content and reduce anti nutritional protein which inhibit in absorption of other nutrients in body.
